Easy Crockpot Meatloaf Dinner

The best way to make meatloaf in the crockpot!
Meatloaf is kind of this all-purpose, go-to dinner recipe. It doesn't involve any ingredients that are expensive or complex. It's easy. And it is liked by everybody.
The only issue with meatloaf is the time needed to make. First form the loaf and you need to mix up, it requires about one hour in the oven. Not a meal for days when you are going to be on the move up until dinnertime.

The obvious solution for this issue? Make the meatloaf from the Crockpot! In actuality, I found a way to cook the meal at the Crockpot -- meatloaf and potatoes and went one better.
It takes a small amount of time to build the meatloaf in the morning and load it to the slow cooker, with its copy band of carrots, taters, and a tangy tomato glaze. But once it is all loaded up in the crock, you do not need to do another thing -- as you're out and about, it cooks on low, all alone.
When you get home, your meat, veggies, and potatoes will be cooked to perfection and ready to serve. So your dinner recipe could be your dinner recipe that is come-home-to .

Ingredients
  • 2 lb extra lean ground beef
  • 1/4 cup bread crumbs
  • 2 eggs
  • 1/4 cup diced onion
  • 2 tsp garlic powder
  • 1 TB dried parsly
  • 1 tsp salt
  • 1/2 tsp pepper
  • 3 TB A1 sauce
  • 1/4 cup ketchup
  • 1/3 cup BBQ
Sauce Topping:
  • 1/3 cup ketchup
  • 2 TB Brown sugar
  • 2 teaspoon Worcestershire sauce
Veggies:
  • 2 cups baby carrots
  • 3-4 cups small red potatoes
  • 2 TB olive oil
  • 1 TB minced garlic
  • salt and pepper to taste
Instructions
1. Prepare your crockpot. In a large bowl, mix together beef, bread crumbs, eggs, onion. It's ideal to mix to blend all ingredients.
Form a loaf and put into the middle of the toaster. Make sure the edges are not touching.
In a small bowl blend together topping ingredients. Brush on top of meatloaf so it it evenly coated.
In a large bowl, combine carrots, potatoes, olive oil, garlic, pepper and salt. Toss until ingredients are well blended.
Place veggies around the outer edges of your meat loaf.Cover and cook on LOW for 7-8 hours.
